Pork Loin Steaks With Cornmeal Pancakes

A few nights ago I decided to go off recipe and the result was a quick and light mid-week meal: Pork loin steaks with fresh salsa, hot tomato sauce and cornmeal pancakes. It might sound like a lot of effort, but you’ll only need around 30 minutes combined prep and cooking.

To Serve Two You’ll need:

  • Two Pork Loin Steaks
  • One Red Onion
  • One Pack Baby Plum Tomatoes – Can be substituted with three to four salad tomatoes
  • Jalapeño – The kind you can get in a jar (Fresh is always good too)
  • Coriander – Buy fresh and store in a sandwich bag in the freezer
  • One Red Chilli
  • One Green Chilli
  • One Lime
  • Tomato Puree
  • Fine Cornmeal Flour
  • One Egg
  • Milk
  • Seasoning – I used salt, pepper, chilli flakes and cayenne pepper

For the Salsa:

  • Finely chop half the red onion, dice half of the tomatoes, the red chilli (taking out the seeds and membrane for less of a kick), a small handful of coriander and put into a bowl
  • Squeeze the lime juice over the salsa and mix well

For the Tomato Sauce

  • In a frying pan, add the remaining tomatoes, halved, along with the rest of the onion, diced and sauté lightly
  • When the onion has softened a little, add in the jalapeño (if from a jar, add about a quarter or one fresh chilli)
  • Add in three table spoons of tomato puree, and a splash of water to loosen up
  • If you have a hand blender, use this to make a smooth sauce. Though otherwise just serve as is

For the Pork:

  • Cover both sides with seasoning to your taste
  • Place on a baking tray ready to grill, these will take 10-15 minutes on a medium high grill and require turning every few minutes – these could be pan fried if you prefer

For the Cornmeal Pancakes

  • Weigh out 100g of the fine cornmeal. Dice the green chilli and mix with the cornmeal and 200ml water to form a dough. mix in an egg and a small amount of milk to make a batter
  • Cook in a frying pan with a very small amount of oil, these can be cooked whilst the pork is on the grill

To Serve:

  • Place two or three pancakes on a plate and top with the pork loin with the salsa and the sauce on the side
