Spicy Sweet Potato Curry

On a cold and wet day, there is nothing like a fresh and spicy curry to hit the spot! This is a straight forward recipe that will serve four people with rice or two without.

You’ll Need

  • 4 Medium Sweet Potatoes
  • 2 Peppers
  • 3 Red Onions
  • 1 Tin Tomatoes – 400g
  • 1 Small Tin Red Kidney Beans – 250g
  • 2 Chilli Peppers
  • Curry Paste – Ideally tomato based
  • Frozen Peas (Optional)


To Make

  • Dice the onions and chilli peppers and chop the sweet potatoes and peppers into large bite size chunks
  • In a large pan, warm some olive oil and add the onions and one of the diced chilli peppers – cook until the onions have softened. At this point, add the curry paste, sweet potatoes and tomatoes and stir. Cook for a further 20 minutes, stirring occasionally
  • Add the chopped peppers, remaining chilli pepper and kidney beans – cook until the sweet potato has softened. If you’re adding peas, do so now and serve up once they are cooked through

  1. I made osmehting very similar to this just last night! Mine was packed it full of cauli and broccolli, but your sweet potato version looks and sounds delicious. Must try this sometime 🙂
