Home baked shortbread is delicious when served with some whipped cream and a fresh berry compote

You’ll Need:

  • 8oz Plain Flour
  • 8oz Butter or Margarine
  • 4oz Sugar

To Make

  • Line a 7″ to 8″  round cake tin with greaseproof paper and pre-heat the oven to 150C
  • Cut the butter or margarine into large cubes and in a large mixing bowl rub into the flour and sugar to make a soft dough. I use the dough hook attachment on my stand mixer to do this
  • Once it comes away from the bowl leaving nothing behind, turn out onto a floured surface and knead until the dough is smooth
  • Pack into the cake tin, pressing the dough down to fill the space. Turn out onto a baking tray and prick with a fork. Bake for 50-60 minutes.
  • When removed from the oven the shortbread will still be pliable, sprinkle with sugar and leave to cool on a wire rack
