Mint Raita

After a recent visit to to Goa, I’ve been trying to recreate some of the tasty dishes we had out there. One of my favourites was a fresh mint raita and I’ve created a version of it that is great with poppadoms, dosas and even tortilla chips.

You’ll Need
Natural Yoghurt
• Fresh Mint
• Half Fresh Green Chilli
• Quarter Cucumber

To Make
• Deseed and finely chop the chilli, mince the mint and pop into a mixing bowl
• Scoop the seeds out of the cucumber and then finely dice or grate the cucumber onto a sheet of kitchen paper, squeeze out any excess water and then place into the mixing bowl
• Mix in the natural yoghurt and fold together, spoon into a serving dish and you’re done!
