Rhubarb and Apple Cordial

Rhubarb is one of my favourite British fruits, and a fresh fruit cordial topped up with sparkling water is the perfect partner to this sunny weekend!

You’ll Need

  • 750g Rhubarb, Washed and sliced into small chunks
  • 2 Eating Apples, Washed and Chopped (Braeburn or similar)
  • Squeeze Lime Juice
  • 200g Sugar
  • 500ml Water

To Make

  • Pop the chopped fruit into a large saucepan with the water and simmer with the lid on for about 30 minutes
  • Leave covered, overnight
  • Pour the mix into a sieve above a clean bowl and let the liquid drain into the bowl below
  • Put the stewed fruit into a tub and pop into the fridge to serve with ice-cream
  • Heat the liquid through in a saucepan with the sugar until dissolved and add the lime juice
  • Decant into sterilised bottles and keep chilled for up to two weeks
  • Best served chilled, topped up with sparkling water
