Mighty Minestrone Soup

In stark contrast to the salad I previously posted, this soup is hearty and is a proper winter warmer. It’s also not too bad for you either.

You’ll Need

  • 65g Diced Smoked Pancetta
  • 3 Large Carrots, Diced
  • 2 Onions (One white, one red), Diced
  • 1 Leek, Cleaned and Sliced
  • 1 Large Potato, Peeled and Diced
  • 1 Tin Haricot Beans, Drained and Rinsed
  • 1 Tin Chopped Tomatoes
  • 1 Pint Vegetable Stock
  • 2 Sticks Celery, Diced
  • 100g Soup Pasta or Broken Spaghetti
  • Pinch Sage

To Make:

  1. In a large solid saucepan, warm through olive oil and pop in the pancetta – stirring every now and then for 5 minutes
  2. Add the onions and leek and stir for a further 5 minutes
  3. Add the root vegetables and stir for 5 minutes, then add the sage and some salt and pepper
  4. Pour in the stock and chopped tomatoes in, stir and leave for 20 minutes
  5. Stir in the pasta and leave for another 10 minutes
  6. Pop in the beans, stir and heat them through
  7. Serve with Crusty Bread
